Seven-Grain Salad with Fresh Herbs and Italian Vinaigrette

Ingredients

  • 1 tablespoon red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 small clove garlic, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package (8.5 ounces) SEEDS OF CHANGE® Seven Whole Grains
  • 1/2 cup chopped carrots
  • 1/2 cup chopped cucumber
  • 1/2 cup cut-up roasted red bell pepper
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 1/4 cup sliced green onion
  • 1/4 cup crumbled Feta cheese

Directions

  1. Whisk together vinegar, oil, mustard, garlic, salt and pepper.
  2. In large bowl, toss remaining ingredients with vinaigrette.
  3. Serve immediately or cover and refrigerate up to 4 hours.
