Italian Meatballs with Fresh Tomato Sauce

Ingredients

  • Sauce
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 1/2 pounds Roma tomatoes, peeled, seeded and cut into 1-inch pieces
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoons chopped fresh oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Dash ground cayenne pepper
  • Meatballs

  • 1/2 pound lean ground beef or lean ground turkey
  • 1 package (8.5 ounces) SEEDS OF CHANGE® Quinoa and Brown Rice with Garlic
  • 1 egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, finely chopped
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. To make sauce, in large saucepan, heat oil over medium heat.
  2. Cook and stir onion and garlic in oil 3 minutes.
  3. Stir in remaining sauce ingredients; heat to boiling.
  4. Simmer covered 20 minutes, stirring occasionally.
  5. Uncover; crush tomatoes with potato masher or large spoon.
  6. Simmer uncovered 10 to 15 minutes longer until thickened.
  7. Meanwhile, line broiler pan with foil; spray broiler rack with cooking spray.
  8. Combine all meatball ingredients in a large bowl.
  9. Shape into 1-inch balls. Place meatballs on broiler rack.
  10. Turn oven to broil. Broil meatballs 4 to 5 inches from heat 7 to 9 minutes, turning once, until browned and internal temperature reaches 160°F. Stir meatballs into sauce.
