Cream of Mushroom and Great Grain Soup

Ingredients

  • 4 cups assorted fresh mushrooms, chopped
  • 1 medium onion, chopped
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups chicken or vegetable* broth
  • 1/2 cup dry white wine
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package (8.5 ounces) SEEDS OF CHANGE® Seven Whole Grains
  • 1 cup shredded Asiago cheese
  • 1/2 cup cream

Directions

  1. In 5-quart Dutch oven or stockpot, melt butter over medium heat.
  2. Cook and stir mushrooms and onion in butter 6 to 8 minutes or until softened.
  3. Stir in flour; cook 1 minute.
  4. Gradually stir in broth and wine until thickened and bubbly.
  5. Stir in SEEDS OF CHANGE® Seven Whole Grains, thyme, salt and pepper.
  6. Cook over medium-low heat 5 minutes longer.
  7. Remove from heat; stir in cheese and cream.
